For the Sauce

Ingredients

  • 1 tbsp butter
  • 1 tin (400g) chopped tomatoes
  • 30g tomato purée
  • 1 shallot (or small onion), finely chopped
  • 2 garlic cloves, minced (or 1 tbsp of frozen garlic)
  • 1 tsp frozen basil (or small bunch of fresh basil)
  • 1 tsp sugar
  • 1 tsp Italian herbs
  • 1 1/2 tsp chip spice
  • 1/2 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Heat 1 tbsp of butter in a large pan over medium heat. Once the butter has melted and starts to foam, add the finely chopped shallot (or onion) and cook for 3-4 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and cook for another 30 seconds, until fragrant.
  2. Stir in the 30g of tomato purée and cook for 1-2 minutes.
  3. Pour in the 1 tin of chopped tomatoes. Stir in the basil, sugar, Italian herbs, chip spice, paprika, salt, and pepper. Mix everything well. (If blending the sauce, keep a small amount of basil to add after blended.)
  4. Bring the sauce to a gentle simmer. Lower the heat and let it cook for about 15-20 minutes, stirring occasionally.
  5. If you prefer a smoother sauce, blend until smooth. (Add additional basil.)
  6. Once the sauce is thickened, remove it from the heat. This sauce is usually used for pizza, but works well for meatball subs or as a pasta sauce.
