For the Sauce
Ingredients
- 1 tbsp butter
- 1 tin (400g) chopped tomatoes
- 30g tomato purée
- 1 shallot (or small onion), finely chopped
- 2 garlic cloves, minced (or 1 tbsp of frozen garlic)
- 1 tsp frozen basil (or small bunch of fresh basil)
- 1 tsp sugar
- 1 tsp Italian herbs
- 1 1/2 tsp chip spice
- 1/2 tsp paprika
- Salt and pepper, to taste
Instructions
- Heat 1 tbsp of butter in a large pan over medium heat. Once the butter has melted and starts to foam, add the finely chopped shallot (or onion) and cook for 3-4 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and cook for another 30 seconds, until fragrant.
- Stir in the 30g of tomato purée and cook for 1-2 minutes.
- Pour in the 1 tin of chopped tomatoes. Stir in the basil, sugar, Italian herbs, chip spice, paprika, salt, and pepper. Mix everything well. (If blending the sauce, keep a small amount of basil to add after blended.)
- Bring the sauce to a gentle simmer. Lower the heat and let it cook for about 15-20 minutes, stirring occasionally.
- If you prefer a smoother sauce, blend until smooth. (Add additional basil.)
- Once the sauce is thickened, remove it from the heat. This sauce is usually used for pizza, but works well for meatball subs or as a pasta sauce.
For the dough
