Crispy Duck Pancakes

Serves 2 very very hungry people

Here’s a recipe for Duck pancakes:

Ingredients

  • 1 duck
  • 4 tbsp Chinese five-spice powder
  • 4 star anise
  • 2 garlic cloves, bashed
  • 1 tbsp frozen ginger
  • 1 onion
  • Duck pancakes
  • Quarter of a cucumber
  • 4 Spring onions
  • Salt and pepper

Instructions

  1. Preheat the oven to 160ºC/Gas 3.
  2. Start by seasoning the inside of the duck. Pat with kitchen paper, then season well with salt and pepper. Place the onion, chopped in quarters, the ginger, garlic and star anise into the duck.
  3. Rub the five-spice all over the duck and place on a rack set over a roasting tray. Roast for 1 hour on 160ºC then turn the oven down to 140ºC and cook for 2 1/2 hours to 3 hours, or until the internal temperature reaches 74°C.
  4. Once cooked, transfer to a plate, cover loosely with foil and set aside to rest for 15 minutes.

Towards the end of the ducks cooking time, prepare the cucumber and spring onion by cutting into thin slices. Warm the pancakes according to the package instructions.
